What I love the most about this recipe is just how dang easy it is! I’m telling you, anything that’s basically like “Throw It All in the Pot and Let It Cook” is made for me. :)
And I know it’s made for you and your busy schedule as well.
I originally saw this recipe on the Dr. Fuhman Forum for members and I adapted it to be a lot simpler and flavorful. Try serving this stew over a bed of wild rice, or alongside a huge salad, to make it a full Nutritarian meal.
Totally Customizable Lentil Chickpea Stew
Another thing I love about recipes that are so easy like this, is that they are also super customizable.
You can add or subtract any veggie or Nutritarian ingredient that you like. And if you aren’t following the Nutritarian plan very strictly, feel free to add salt, or season salt, or even a little meat like shredded chicken.
And as always, feel free to try out just doubling the spices first before you add extras. Then if you really need to, add whatever else you’d like.
Make It How You Like It
The sky is the limit with any recipe I post; feel free to customize anything to your individual taste preferences. The great thing is, I will always be giving the healthiest version of any recipe, and from there you can take it wherever you’d like.
No oil, salt, sugar, no meat, no dairy, no gluten (for the most part)…just super healthy Nutritarian foods that you can make your own! :-)
- 1 medium onion, chopped
- 2 large carrots, chopped
- 2 cups cooked lentils or 1 15-ounce can low- or no-sodium lentils, rinsed and drained
- 1½ cups cooked chickpeas or 1 15-ounce can low- or no-sodium chickpeas, rinsed and drained
- 4 cups low- or no-sodium vegetable broth
- 2 cups water
- 3 tablespoons tomato paste
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- 2 teaspoons oregano
- 1 teaspoon Mrs. Dash, chipotle flavor
- 3 cups mushrooms, chopped
- 3-4 cups spinach or baby kale, chopped
- To a large soup pot over high heat, add all ingredients and stir to combine. Bring to a boil and reduce heat to simmer for 30 minutes. Add the greens and cook for another 5 minutes.

Cheri, I have been on the eat to live for several months now and have lost twenty three pounds. Still want to lose another 7 pounds but seem to be stuck in a plateau for over 4weeks now :-(( . Found your site on youtube and love the roasted chick pea snacks. Will make this stew today. Maybe I am just stuck because I’ve been eating the same thing over and over and over. Maybe mixing it up with some of your ideas will jump start my weight loss.

And yes I have to say it’s VERY important to mix up what you eat, esp if you’re stuck on a plateau. One of my fav tips is to make a rule for yourself to try a new recipe once per week, without fail. Finally making the stew! It’s so beauteous! I subbed some really gorgeous Lacinato Kale and what I THOUGHT were lentils, turned out to be split peas! Still super yum with leftover roasted rosemary taters thrown in too!

What about throwing this in an instapot?
YES, Kate, great idea. This would work well! You could add dry chickpeas and put it on the “Beans” setting for 35 minutes, natural pressure release. But, if you do that, you’ll want to add pre-cooked lentils once it’s done instead of adding them dry, because if you cook them the same way as the chickpeas, they will totally turn to mush and not retain their shape. :) Hope you love it! <3
This dish has become my all time favorite go-to. (I actually nearly double the mushrooms) 15 min. prep…35 min. cook time while i do my hair and makeup. Bam!!!!! I’m good for 4 days of delicious dinner.😋

I cooked the recipe (yep i am a guy who can boil water) It was good but! but seemed more soup than stew. What could I have goofed up ( yep I am a guy that can admit that ) I am going to try it again next week.
Not entirely sure, Allan, but no worries, lots of variables. Next time, maybe omit the water and only use some if you need it. Say, after 15 minutes if it’s thickening up too much, just add some more water or broth. Let me know how it works next time! <3
