I got contacted by Sam’s Club recently to create a post using some of their fresh fruit and a recipe from their cookbook Fresh, Fast and Fabulous. I love free food and cookbooks so I gladly accepted! Ha! When I went shopping, I stocked up on some yummy fruit* including some peaches and blueberries so that I could make these Peach Yogurt Popsfrom the book! I wanted to make the fresh version, so instead of the canned peaches that they called for, I added in fresh plus some honey and agave nectar! And they turned out awesome! FYI, the best way to get fantastically delicious, ripe peaches is to visit your in-laws in Hungary and just pick some off their tree in mid-August…. i.e.:
But, if for some reason you don’t happen to have amazing in-laws in Hungary, you’ll just have to make do with getting them in-season at a store or farmer’s market near you. The best time for this is late summer, because they’ll be ripening perfectly at this point. But, I have found that you often can’t find the tree-ripened kind in the store, so what you end up getting here in the US are peaches that were picked way early, resulting in really firm, not-ready-to-eat-yet peaches.
So my super-secret trick is this: pick the ones in the store that just look the best and are in the best shape. When you press them, a little give is good if you can find them like that. Otherwise, all you have to do is, when you get home, put them in a paper bag, close it up and leave them out at room temperature. In a day or two your peaches will be perfectly ripe and ready to eat! Then, when you don’t want them to get any more ripe because they’re perfect, then store them in the fridge and this will help to halt the ripening process! Eat them immediately!
AAANDDD without further ado, here is the recipe for my adapted version of the refreshingly delicious Peach Yogurt Pops:
Peach Yogurt Pops
adapted from Fresh, Fast and Fabulous
INGREDIENTS
makes 4 small yogurt pops
1 ripe or almost-ripe fresh peach
1 6 oz container greek yogurt (any flavor)
2 tbsp honey or agave nectar
4 5 oz paper drink cups
4 plastic spoons or popsicle sticks
DIRECTIONS Peel and de-pit the peach. Add the peach flesh, yogurt and sweetener into a blender or food processor. Blend until smooth. Pour 4 equal parts of the yogurt mixture into the cups. Plunge a spoon into the cups and place in freezer for 2-4 hours or overnight. Remove the cup by peeling it open and serve immediately.
