It’s a powerhouse of nutrients, fantastic for boosting your immune system and supporting your health.
This is a recipe that I’ve been making for a couple years now and I am always pleasantly surprised with the subtle flavor you get from the cucumber. It’s a very unusual taste in a smoothie, but I think that’s what makes it so great.

I am the type of person who often gets stuck in flavor ruts (peanut butter + chocolate, anyone?) and I SOOOO love this for giving me a break and making me appreciate my favorite flavors that much more.
This recipe comes from Dr. Joel Fuhrman‘s book Super Immunity, and I have been making it ever since I first read the book a couple years back.
You should really try it; it’s definitely a go-to for me!

- 1 cup pomegranate juice
- 1 cup compacted baby spinach
- 1 cup compacted Boston lettuce
- ½ medium cucumber
- ½ cup frozen blueberries
- 1 cup frozen mixed berries or strawberries
- 3 pitted medjool dates
- 2 tablespoons ground flaxseeds
- 1 cup ice
- Blend ingredients in a high-powered blender until smooth and creamy.
Do it all the time. Delicious!
I use organic cues. I dice and freeze them with their skins on. When needed I just throw them in with the frozen fruits. Yum!

Another great and abundant alternative to cucumber is watermelon rind, which is in the same family as cucumber. When cutting a watermelon, cut off the outer green rind, and just underneath that is the cucumber-like flesh until it meets up with the red flesh. Cut all that cucumber like flesh, and dice it into cubes, and use that in your smoothies as well
