I’m all about simplicity. When you want to be able to stick to your healthy lifestyle, sometimes simplicity is the only thing that can keep you there.
I created this one when I was sick of eating another particular salad one week. I loved the salad when I first made it, but then after eating it for a few days, I craved a change in flavors. So I did the logical thing — I just created another salad! :D
One thing I used to do in the beginning that always made me mess up on healthy eating was trying to cram too many things in one dish. I figured, “more of a good thing is always better.” It worked for a while, but it ended up boring me. So when I started to have 3-4 dishes in my fridge at all times, I started mixing and matching at each meal and found that I was super satisfied because I could always change it up.
Flavor Switching for Maximum Enjoyment
The week I created this recipe, I was eating my Purple Haze Salad plus raw sauerkraut I got at Whole Foods, and mushroom soup. I found that if I switched food every 3 bites, it would amazingly keep my attention fixed, and I didn’t get bored of what I was eating! It was like the “first time” every time I took a bite.
I highly recommend this technique.
So this salad, though ridiculously simple, could just be the difference between you being remaining to your healthy, Nutritarian lifestyle one day…or else…not…
It’s super refreshing and perfect for summer. I highly recommend it now — find those yummy summer tomatoes!
- 2 cups grape or cherry tomatoes, halved
- 1 English cucumber, chopped
- 1 handful fresh dill, chopped
- In a medium sized bowl, add all ingredients and toss to combine. Serve as a side along other salads or main dishes.
