My quick & easy lunch or supper— a cooked whole grain or thawed sweet corn, a drained rinsed can of your favorite bean, salsa. With some raw vegetables or salad (if you’re really ambitious)
If you have more time and inclination you can chop raw vegetables instead of salsa
I can get pouches of microwaveable brown rice (takes 90 seconds).
Eat cold or heat in microwave or stove top. Good for the upcoming cold wisconsin winter

My quickest meal is making hummus just with chickpeas, a bit aquafaba, a bit water, garlic, spices all mixed and a sweet potato covered in wet paper towels for each side 3 minutes in the microwave.
Put hummus over the potato and eat. 👍😃. 💕
Our fave quick dinner is to dump 1 cans of black beans, 1 cup of salsa, 1 cup of veg broth, 1 tsp chili powder, 1 tsp cumin all into a pot, heat and serve. Alternatively you can keep back 1/2 the beans, blend the hot soup until smooth, then add the reserved black beans back in, depending on what texture you like your soup to be

I like to use bean based salad dressing instead of of dressings made with nuts. Tami from the Nutmeg Notebook has a fantastic “Creamy balsamic dressing” made using white beans. This allows me to saturate a large salad w/ flavor & feel satiated too.

I saute onion till soft, Add 1 peeled chopped EGGPLANT, cover & saute soft & translucent, add 1 LG can Crushed tomatoes (preferably San Marzano), saute 10 minutes and finish w 1Tb basil.
Top zuchini noodles with this sauce.
